In Italy, it's called balsamic condimento, and it's made from grape pressings that have been boiled down to a thick syrup, then aged in casks. And Troy Johnson has 20 different kinds on tap, along with 30 varieties of fused, infused and organic olive oils, at the tasting room and shop that he and Steven Ketchersid are opening next weekend in Eureka Springs.
